Intermediate Off-Flavor Sensory Training

Led by Cicerones Chris Creech and Whit Baker, this hands-on course is designed for brewing professionals who already have a foundation in sensory evaluation and want to sharpen their skills. Using Lallemand Brewing's Intermediate Off-Flavor Sensory Kit, participants will learn to detect, identify, and describe a wide range of off-flavors that can impact beer quality.

Through guided tasting and discussion, attendees will gain practical experience in recognizing common faults, understanding their causes, and considering preventative measures in the brewing process. This session is ideal for brewers, quality control staff, and sensory panel members looking to take their evaluation skills to the next level.

Whit Baker, Advanced Cicerone

Whit Baker holds degrees in secondary education and biological sciences from North Carolina State University. Since 2011 he has immersed himself in the science of brewing and fermentation. He holds a certified rank as a beer judge from the Beer Judge Certification Program, possessing an in-depth knowledge of over 80 styles of beer and evaluating professional and amateur beer in competitions. Whit is also an Advanced Cicerone, fully knowledgeable in managing a beer bar, accurately performing on-the-spot evaluations of the condition of beer, and maintaining a draft system in the taproom. At Bond Brothers Beer Company, located in Cary, North Carolina, he is the Brewmaster who is constantly innovating and improving his process resulting in his well-earned reputation in the Triangle area craft beer scene.
