This session will explore the fundamentals of cannabinoids, and how they interact with the human body. Attendees will gain insight into the science of intoxication, how cannabinoid effects differ from alcohol, and what happens when these substances are combined. The session will also touch on practical considerations for both brewers and consumers, providing a foundational understanding of this growing segment and its implications for product development, safety, and responsible consumption.
Brett Taubman, PhD, Professor and Director of Fermentation Sciences, A.R. Smith Department of Chemistry and Fermentation Sciences
Dr. Brett Taubman is a Professor in Chemistry and Fermentation Sciences Department at Appalachian State University. He earned BS degrees in Finance and Chemistry from Penn State and Montana State University, respectively, and a PhD in Chemistry from the University of Maryland in 2004. Following his graduate studies, he worked as a Post-doc at Penn State before joining the faculty at Appalachian in 2007. Dr. Taubman’s research focuses on fermentation chemistry, agricultural postharvest value addition, and improvement of nutritional intake and gastrointestinal health. He has successfully developed an instructional fermentation facility at Appalachian State and serves as President of Ivory Tower, Inc., a 501(c)(3) non-profit corporation with the mission of supporting research and education within fermentation sciences. Dr. Taubman helped to develop the four-year degree program in Fermentation Sciences at Appalachian State, for which he is currently the Director.
